This is one of my favourite desserts to bring to a potluck, especially if you're running late from work. It is SO easy to make, is packed with superfoods, doesn't compromise on taste and you can serve it to anyone, even those who would turn their nose up at something vegan.

Ingredients
1 large ripe avocado
1 large ripe banana
3 heaped teaspoons of raw cacao powder
1 teaspoon vanilla extract or 1/2 teaspoon vanilla bean paste or pods from 1 fresh vanilla bean
Tiny pinch of Celtic sea salt
A sprig of mint to top
Optional added sweetness: 2 x organic pitted medjool dates. Alternatively, you could use a drizzle of coconut syrup, brown rice syrup, maple syrup OR for a sugar free option; monkfruit sweetener or stevia
If you'd like to add a serve of chocolate protein powder to bump up your protein intake, go for it!
Instructions
Blend until creamy smooth with a hand blender. Spoon into a bowl and allow to set in the fridge. Serve with fresh strawberries or raspberries.
Nb. The banana to avo ratio is flexible. Play around with whatever you have available or whatever tastes good to you! You can also add more cacao if not rich enough, or a little coconut milk if too rich.
Add a splash of filtered water or coconut water to make a lighter mousse.
